Adobo is known as one of the most popular dishes among Filipinos and is prepared in so many ways.
1 bulb of garlic, slightly crushed
1 kilo of pork belly, cut into cubes
1 cup white vinegar
1 cup Sprite or 7-up
1/2 cup dark soy sauce
1 teaspoon black peppercorns
3 to 4 pieces of bay leaves
2 tablespoons cooking oil
Instructions:
1. In a medium size cooking pan or pot, pre-heat the cooking oil and saute the crushed garlic until it turned
slightly brown.
2. Add pork cubes and saute for a few minutes or until the meat has browned.
3. Add peppercorns, bay leaves, soy sauce and vinegar. Cover and simmer for 30 - 45 minutes. Stir
occasionally.
4. Once the liquid subsides in half, add Sprite or 7-up. The goal is to make the sauce taste sweet, salty
and sour.
5. Simmer for another 15 minutes. Again, stir occasionally.
6. Stir one more time so that the reduced sauce covers the meat.
7. Turn off the burner and let it sit for about 5 minutes before transferring to a bowl so the sauce is absorbed
in the meat.

This recipe shows a different version on how to cook pork adobo with less sauce. The main ingredient here is "pork belly" as it has the layered fat and meat which gives the mouth-watering yummy taste!
